三田牛はと

地域商標である「三田肉」「三田牛（ぎゅう）」と称することが許されるのは、兵庫県で生まれた正当な血統の但馬牛（うし）の子牛を三田市やその近郷（神戸市北区・宝塚市西谷地区）の三田肉流通振興協議会が指定した生産農家が肥育し、三田食肉センターに出荷して基準を満たしたものに限られる。
さらに、そのうち上位品質のものは「廻（かい）」というブランドとなり、三田牛の中でも神戸ビーフの定義に該当する場合、「神戸ビーフ」ブランドで流通するケースもある。

生きた牛でおこなわれる品評会

三田でこの素晴らしいビーフが育まれるのは、寒暖の差が大きい気候、ミネラルを多く含む水に恵まれた三田の風土だけではなく、文化的土壌も大きな要素となる。

かつて三田藩では牛で米俵を運び年貢米を納めたが、多くの牛が一か所に集まる中でお互いの牛の優秀さを競い合い、肥えた良い牛には藩主から褒美が与えられたこともあり、みな熱心に牛を育てたという歴史がある。

そんな土地柄が、現代の高い肥育技術にも結び付いている。
そしてこの文化を垣間見ることができるのが、さんだ農業まつりの会場でおこなわれる品評会とセリ市で、全国的にも珍しく生きた牛でおこなわれている。

The festival is a rare opportunity to glimpse this culture, as the cattle auction and sale of live cattle are held at the site of the Sanda Agricultural Festival.

兵庫から世界に届ける ハラールビーフ

三田食肉センターでは2014年にハラール認証を取得。
UAEなどイスラム圏への輸出が認められている食肉センターは、全国で5つしかない。

ハラールビーフ【Halal beef】

ハラールビーフとは、イスラム教の教えに従って処理された牛肉のことを指します。「ハラル」とはアラビア語で「許可された」「合法的な」という意味であり、イスラム法（シャリーア）に基づく特定の方法で屠殺され、加工された食品を指します。ハラルビーフが適切とされるためには、屠殺時に牛が健康であること、イスラム教の教義に従ってアラーの名を唱えること、そして動物に対してできるだけ苦痛を与えない方法で迅速に処理することが必要です。

さらに、ハラルビーフの処理においては、豚やその副産物、アルコールなど、イスラム教で禁じられた物質（ハラム）と混ざらないよう厳格に管理されます。ハラル認証を受けたビーフは、イスラム教徒だけでなく、品質や倫理的な側面を重視する消費者にも支持されています。近年、ハラル食品市場は世界的に成長しており、ハラルビーフもその需要が高まっている食品の一つです。

Halal beef refers to beef that has been processed according to Islamic law “Sharia”. The word “halal” means ‘permitted’ or “legal” in Arabic and refers to food that has been slaughtered and processed in a specific way according to Islamic law “Sharia”. Halal-certified beef is favored not only by Muslims, but also by consumers who value quality and ethical aspects. In recent years, the halal food market has been growing worldwide, and halal beef is one of the foods in increasing demand.
